Artichoke and Sweet Potato Gratin

  • 2 tablespoons vegetable oil
  • 2 medium onions or 300 g, cut into thin slices
  • 1 medium sweet potato or 250 g, peeled and cut into thin strips
  • 500 g artichoke hearts, sliced
  • ½ teaspoon ground black pepper
  • 3 tablespoons fresh parsley, chopped
  • ¼ cup fresh breadcrumbs or 50 g, white
  • 1 cup mozzarella cheese or 100 g, grated
  • For the béchamel sauce:
  • 4 cups milk or 1 litre
  • 1 sachet MAGGI® Béchamel Mix

How to Prepare

  1. Heat oil in a pan, add onions and cook over medium heat for 5 mins, or until tender.
  2. Add sweet potatoes and cook while stirring for another 5 mins. Season with black pepper and salt. Mix in the artichoke hearts and parsley, then remove from heat.
  3. Spoon the artichoke mixture into an oven tray, then sprinkle breadcrumbs.
  4. Combine the milk and MAGGI® Béchamel Mix to a boil in a large pot while stirring for 2-3 mins until the sauce thickens.
  5. Pour MAGGI® Béchamel Mix over the artichoke mixture and sprinkle Mozzarella cheese on top.
  6. Bake in a 200°C preheated oven for 15-20 mins or until the surface is golden brown.
