Chickpeas and Tomato Soup

  • 1 tablespoon vegetable oil
  • 1 small onion or 70 g, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons coriander leaves, chopped
  • 1 medium tomato or 150 g, peeled and diced
  • 1 teaspoon tomato paste
  • 5 cups water or 1250 ml
  • 1 tin canned chickpeas or 400 g, drained
  • 1 sachet MAGGI® Chicken Oat Soup
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon ground black pepper

How to Prepare

  1. Heat oil in a large saucepan, sauté onions for 2 mins then add parsley, coriander, and stir.
  2. Add tomato, tomato paste, water, chickpeas, and MAGGI® Chicken Oat Soup. Season with spices, bring to boil and simmer uncovered with occasional stirring for 10 mins and serve.
