Coriander and Cucumber Fried Rice

A rather exotic version of fried rice, this one has the cool cucumber and luscious coriander. Check out other recipes in MAGGI® Arabia for more home cooking inspirations.


  • 2 cups rice or 500 g
  • 3 cups water or 750 ml
  • 2 cubes MAGGI® Chicken Bouillon
  • 3 eggs, lightly beaten
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 1 tablespoon grated ginger
  • 3 tablespoons soy sauce
  • 3 tablespoons coriander leaves, chopped
  • 2 medium cucumbers or ¾ cup, finely chopped

How to Prepare

  1. Mix the rice, water and MAGGI® Chicken Bouillon cubes in a pot. Cover and cook on low heat for 20-25 mins or until the rice is cooked.
  2. Prepare an omelette with the eggs, roll it then chop it into strips. Remove and set aside.
  3. Heat oil in a pan, add onions, ginger and cook on medium heat for 4-5 mins.
  4. Add soy sauce, fresh coriander, cucumber, chopped omelette and the cooked rice. Mix the ingredients well and remove from heat.
  5. Place the fried rice in a serving dish, serve next to a grilled fish, meat or chicken.
