Mediterranean Fish Stew

  • 2 tablespoons olive oil
  • 2 small onions or 200 g, chopped
  • 4 cloves garlic, crushed
  • 1 tablespoon grated ginger
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • ½ cup coriander leaves or 35 g, chopped
  • 3 medium tomatoes or 450 g, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground black pepper
  • 1 small red bell pepper or 100 g, cut into chunks
  • 2 cups water or 500 ml
  • 2 cubes MAGGI® Chicken Bouillon Less Salt
  • 750 g white fish fillets, cut into large cubes

How to Prepare

  1. Heat oil in a large pan, add onions, garlic, ginger and bay leaf. Cook over medium heat for 5-6 mins or until onions are almost golden brown.
  2. Add tomato paste, coriander, chopped tomato, spices and bell pepper. Cover and cook for 6 mins.
  3. Add water, MAGGI® Chicken Bouillon Less Salt cubes and bring to boil. Then simmer for 5 mins.
  4. Add fish cubes and simmer while covered for 10-15 mins or until fish is cooked.
  5. Serve with cooked rice.
