Mexican Chicken

  • 2 tablespoons olive oil
  • 1 medium onion or 125 g, finely chopped
  • 1 small chili pepper, green, seeded and chopped
  • 3 cloves garlic, finely chopped
  • 500 g chicken, minced
  • 3 medium tomatoes or 450 g, peeled and finely chopped
  • 2 cubes MAGGI® Chicken Bouillon
  • 1 cup water or 250 ml
  • 2 tablespoons tomato paste
  • 1½ teaspoons ground cumin
  • 1 tablespoon coriander leaves, chopped

How to Prepare

  1. Heat oil in a heavy saucepan, add and cook onion, chilli and garlic over medium heat till onion are soft but not brown.
  2. Add chicken and stir for 2 mins. Add tomato, MAGGI® Chicken Bouillon cubes, water, tomato paste and cumin powder. Cover and cook over low heat for 30 mins.
  3. Add fresh chopped coriander and stir well.
  4. Serve with cooked rice or with tortillas.
