Mexican Rice

  • 3 tablespoons olive oil
  • 1 medium onion or 125 g, diced
  • 1 medium carrot or 150 g, diced
  • ½ cup frozen green peas or 80 g, thawed
  • ½ cup frozen sweetcorn or 80 g, thawed
  • 1 medium tomato or 150 g, peeled and diced
  • 2 cubes MAGGI® Chicken Bouillon
  • 4 tablespoons tomato paste
  • Pinch of ground black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon chili powder
  • 1 teaspoon mild paprika
  • 1 medium green capsicum pepper or 150 g, seeded and sliced
  • 4½ cups water or 1125 ml
  • 2½ cups American rice or 500 g, soaked in water for 1 hour then drained

How to Prepare

  1. Warm olive oil in a large non-stick pot and fry onions for 2-3 mins or until it becomes tender then add the carrot, green peas and sweet corn with constant stirring for 2 mins.
  2. Add tomato, MAGGI® Chicken Bouillon cubes, tomato paste, black pepper, cumin, coriander, chili, and paprika then stir for another 2 mins.
  3. Add green capsicum and water. Bring to a boil. Add rice and stir constantly to boil, cover and simmer over low heat for 20 mins or until the rice is cooked.
