Pumpkin and Cream of Mushroom Soup

Ingredients

  • 350 g pumpkins peeled and cut into cubes
  • 1 small onion chopped or 100 g
  • 6 cups water or 1500 ml
  • 1 sachet MAGGI® Cream of Mushroom Soup
  • Pinch of salt to taste
  • Pinch of white ground pepper to taste

How to Prepare

  1. In a large saucepan, add pumpkin, onion and water. Bring to a boil, then cover and simmer for 15 mins until tender.
  2. Place pumpkin and stock in a food processor or blender. Process until smooth.
  3. Return pumpkin to the saucepan, add MAGGI®Cream of Mushroom Soup, bring to a boil and simmer for 10 mins.
  4. Season with salt and pepper. Serve with toasted croutons.
