Samka Harra Manicotti

  • For the Tomato Sauce:
  • 1 tablespoon vegetable oil or 15 ml
  • 1 medium onion or 150 g finely chopped
  • 2 tablespoons tomato paste
  • 5 garlic cloves crushed
  • ¼ cup or 65 ml hot water
  • 2 cubes MAGGI® Chicken Bouillon
  • 3 medium tomatoes or 300 g peeled and diced
  • 2 teaspoons chilli flakes
  • 1 teaspoon ground cumin
  • For the Fish filling:
  • 4 medium sole or 500 g cut into 5 mm cubes
  • 1 tablespoon olive oil or 15 ml
  • 1 red chili pepper, sweet, de-seeded and finely chopped
  • ½ cup fresh coriander leaves
  • 1 tablespoon lemon juice
  • 1 packet cannelloni or 250 g
  • ½ cup pine seeds or 50 g

How to Prepare

  1. Preheat oven to 180°C and position oven rack at mid-level.
  2. To prepare the tomato sauce: Heat olive oil in a medium saucepan, add onions and saute until soft; add tomato paste and garlic and cook for another 2-3 mins.
  3. Add hot water, MAGGI® Chicken Bouillon cubes, tomatoes and chili flakes and cumin and allow to simmer for 20 mins.
  4. To make the fish filling: In a mixing bowl, combine fish pieces, olive oil, sweet chili, coriander leaves, and lemon juice and allow to marinate for 5 mins.
  5. Pour half the tomato sauce into the bottom of a large baking dish.
  6. Using a piping bag, fill cannelloni with fish mixture, place cannelloni in the baking dish over the sauce, and pour over the remaining sauce.
  7. Sprinkle pine seeds over top and bake in oven for 25 mins or until pine seeds are slightly toasted and golden.
