Spicy Caribbean Chicken Stew



  • 1 kg skinned chicken drumsticks
  • 2 teaspoons ground allspice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon ground dried thyme
  • ½ teaspoon chili pepper
  • For the sauce:
  • ¼ cup olive oil
  • 2 medium onions or 300 g cut into thin slices
  • 2 garlic cloves crushed
  • 1 tablespoon grated ginger
  • 4 medium tomatoes or 500 g chopped
  • 3 cubes MAGGI® Chicken Bouillon
  • 2 tablespoons soy sauce
  • 1 piece orange zest
  • 1½ cups water or 375 ml
  • 2 medium sweet potatoes or 350 g, cut into cubes
  • 100 g fresh baby corn cut into large slices

How to Prepare

  1. Combine all the spices and toss the chicken pieces in them and in the thyme.
  2. Heat half of the oil in a large pan, add and cook the chicken pieces in batches until they turn brown in color. Remove from heat and set aside.
  3. In the same pan, heat the remaining oil, add and cook for 3-5 mins onions, garlic and ginger, till the onion becomes tender.
  4. Add tomatoes, MAGGI® Chicken Bouillon cubes, soy sauce, orange zest, water, potato and corn.
  5. Return chicken pieces to the pan, bring to boil, cover and simmer for 25-30 mins or until chicken is tender.
  6. Serve with cooked couscous or white rice.
