  • 1 cup all-purpose flour
  • 2/3 cup whole meal flour
  • 3 tsp baking powder
  • 1 cup pumpkin, grated
  • 2 cubes MAGGI®Chicken Stock with Natural Herbs
  • 1/2 cup sun-dried tomatoes with oil, chopped
  • 1/2 cup sun-dried tomatoes with oil, chopped
  • 2 eggs
  • 3/4 cup low-fat milk
  • 1/4 cup olive oil
  • 1 cup chopped spinach

How to Prepare

  1. 1. Sift the flours & baking powder in a large bowl.
  2. 2. Add the grated pumpkin, sun-dried tomatoes, chopped spinach and feta cheese.
  3. 3. In another bowl, whisk the eggs with milk and olive oil.
  4. 4. Crumble MAGGI® Chicken Stock with Natural Herbs and add the dried ingredients into the bowl. Mix well using a spatula.
  5. 5. Divide this batter into muffin tray cups.
  6. 6. Bake for 20 minutes at 180º C until the muffins are golden brown.
