Tomato Moghrabiah with Potatoes

Ingredients

  • 7 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 300 g beef cubes
  • 3 tablespoons tomato paste
  • 3 medium tomatoes, diced
  • 2 teaspoons caraway seeds
  • 2 cubes MAGGI® Chicken Bouillon
  • 4 cups hot water
  • 1 bay leaf
  • 1 stick cinnamon
  • 1 teaspoon ground black pepper
  • 2 medium potatoes, cut into 1 cm cubes
  • 1 kg chicken with skin, cut each into 8 pieces
  • 16-18 shallots or very small onions, peeled
  • 2 cups water
  • 2 cups dried moghrabieh

How to Prepare

  1. Heat 2 tablespoons of vegetable oil in a pot. Sauté potato cubes until golden brown. Remove and set aside to drain excess oil.
  2. Using the same pot, add onions and beef cubes, and cook for 10 mins until lightly browned.
  3. Add tomato paste and sauté for an additional 2 mins.
  4. Add tomatoes, MAGGI® Chicken Bouillon, water, caraway, bay leaf, cinnamon stick and black pepper. Cover and cook on low heat for 1½ hr or until the meat is cooked. Add shallots, lower heat, and simmer to keep warm.
  5. Meanwhile, place the chicken pieces in an oven tray and roast for 45 mins until golden brown.
  6. In a large pot, heat the remaining 3 tablespoons of vegetable oil. Add the dried moghrabieh and fry on low heat with constant stirring until the grains turn golden brown.
  7. Gently pour a cup of soup from the meat. Stir from time to time until it is completely absorbed. Repeat the step until the moghrabieh is tender, but not too soft.
  8. Mix in some of the shallots and meat with the moghrabieh grains and remove from the heat.
  9. Pour the remaining stock in a serving bowl. Add half of the fried potatoes, onions, and the cooked meat.
  10. Place the moghrabieh in a large serving dish. Place the hot grilled chicken on top and garnish with the remaining fried potatoes. Serve the sauce on the side.
