Waraq Dawali with Raisins and Dibis Ramman

Ingredients

  • 1000 g fresh vine leaves, washed and trimmed
  • 1 cup (200 g) long grain rice
  • 2 tablespoons (20 g) butter
  • 400 g minced meat
  • 2 teaspoons (10 g) cinnamon powder
  • 1 cup (200 g) raisins
  • 6 tablespoons (90 g) Dibis Raman (Pomegranate Syrup)
  • 1½ cups (150 g) walnuts, finely chopped
  • 2 teaspoons (10 g) dried tarragon leaves
  • 2 cubes MAGGI® Chicken Bouillon
  • 6 cups (1500 ml) hot water
  • 2 tablespoons (30 ml) lemon juice

How to Prepare

  1. Dip the vine leaves in boiling water and lift immediately; then refresh under cold water and drain.
  2. Start to prepare the stuffing by half-cooking the rice in boiling water. Strain and set aside.
  3. In a deep frying pan, melt butter, add minced meat, and sauté for 10 mins on medium-high heat. Add the cinnamon, tarragon, raisins, 4 tablespoons of dibis raman and chopped walnuts to the pan, and sauté for another 5 mins.
  4. Gently add the half-cooked rice, taking care not to break the rice grains.
  5. Spread each vine leaf (shiny side down) on a flat surface. Put 1 tablespoon or teaspoon of the stuffing on each leaf (depending on the size). Fold its sides a bit and roll it.
  6. Tightly arrange and pack the stuffed vine leaves together in layers in a medium-sized pot with no space between.
  7. Put a heavy plate on top to keep the rolls in shape during cooking.
  8. Add MAGGI® Chicken Bouillon, water and dibis sauce into the pot up to a level that covers the vine leaf rolls. Add the lemon juice. Bring to a boil, then cover and simmer for 1 hr, or until the leaves are tender. Add hot water while cooking, if necessary.
  9. Arrange the stuffed vine leaves on a platter. Serve with the remaining stock on the side.
  10. Tip: This dish can be served cold or warm. You can use ready vine leaves if fresh ones are not accessible.
